During the last dates of the year, the Christmas atmosphere takes over the day to day, and family meals are one of the essential elements in the end of the year. Homes are filled with celebration with people who have accompanied you during the year, and many others who have been able to meet again. A meeting in which, on the table, the most traditional foods of the season are placed.

When we think of typical products that have accompanied us for centuries, the selection of turrones,  panettones and cava or sparkling wine, are among the first that come to mind. Through them, the producers also play with textures and fusions to bring out new flavors, but their traditional essence is still there. In this way, we discover seven great cavas and seven great nougats perfect to welcome the Three Wise Men.

As every year, the selection of nougats and cavas is wide. You can discover them one at a time or enjoy them in combination.

Cuvée Rosé de Mar 2017 + Foie Nougat

Joining cavas and nougat is a perfect option to enjoy the flavors, although it can be tasted independently. Vardon Kennett presents the Cuvée Rosé de Mar 2017, a sparkling rosé from Penedès Extra Brut, with 100% Pinot noir grapes. Made by Familia Torres, its fruity cherry flavor along with white rose petals gives it elegance and delicacy. In addition, to accompany it, Grand Mère Gussó arrives with a nougat with an intense duck foie gras flavor and its sweet touch of almond and lemon. A fusion crowned with brown sugar.

The texture and flavor of duck foie gras nougat makes you forget that traditionally nougat is sweet. All this, together with Rosé de Mar, is an explosive mixture.

Manuel Raventós Enoteca Personal 1986 + Nougat Donuts

The limited edition Gran Reserva, Manuel Raventós Enoteca Personal 1986, pays tribute to the 150th anniversary of the first sparkling wine made in a traditional way in Spain. It is one of the perfect cavas to give as a gift on these dates. With a delicate texture, blend of Macabeo, Parellada, Chardonnay and Xarel.lo. And along with it, this year they have surprised with the union of Vicens with Albert Adrià and the announcement of Donuts flavored nougat. A perfect continuation reminiscent of that childhood in this nostalgic time. An almond praline with chocolate caramel Donuts flavor. An exceptional nougat like many others from chef Adrià such as chocolate with churros, soft pistachio, mojito, inedit beer, among many others.

While enjoying the 150th anniversary of the first traditional sparkling wine, Turrons Vicens and Donuts join forces to offer this Christmas a nougat reminiscent of childhood. In addition, the sweetness of the doughnuts is the protagonist.

 

Juvé & Camps Family Reserve Rosé + Nougat XO waffles

Juvé & Camps pays tribute to the iconic Reserva de Familia from 1976, and the centenary of the house with a very fine rosé. Made with 40 months of aging, bringing complexity to the fruit flavors. Completing it being 100% organic. On the other hand, being able to enjoy it with a dessert, the chef Daviz Muñoz continues to innovate with his turrones XO. Gramona Imperial 2017 + New Range Delaviuda and Christian Escribà

Within the sustainability and environmentalism, the winery Gramona offers the Imperial 2017, a Gran Reserva Brut, from Xarel-lo, Macabeo and Chardonnay. Being the first 100% biodynamic harvest in the sparkling wine’s vineyards. Having a creamy and fruity texture, it brings a balance of flavors and elegance. And uniting wine elegance with pastry elegance, pastry chef Christian Escribà has signed a range of Delaviuda nougats made with Delaviuda. Offering different flavors and textures such as Cheesecake, Almond cream, Roscón de Reyes, as well as sacher with apricot jam, Lemon pie and Tiramisu.

Although the selection of nougats is very wide, panettones are not far behind. From the classic ones with raisins to the most innovative ones combining wine flavors with the intense taste of chocolate.

Codorníu Cuvée + Panettone Marroni Filippi

150 years ago, in 1872, Josep Raventós created the first cava with three local varieties: Macabeo, Xarel-lo and Parellada. So, remembering the beginnings, this year they pay tribute to the pioneer with the limited edition of the Codorníu 150th Anniversary. A ecological, fresh, young cava with fruity touches. In addition, together with it, you can combine the Filippi panettones, the Panettone Marroni, handcrafted. In the traditional panettone there are raisins, but this one has chestnuts that make diners travel to warm environments perfect for these colder dates.

Ending Christmas meals with a glass of Codorníu and Filippi’s chestnut panettone is one of the best options.

Gran Torelló + Virginias

After eighty months of aging, Gran Torelló presents Gran Torelló 2014, a complex blend of xarel-lo, macabeo and parellada. A powerful, balsamic and ideal for Christmas food, offering lactic, floral, citrus notes and fine bubbles. Meanwhile, the nougat house, Virginias, brings back to life those moments with family and friends sipping the classic vermouth on a Sunday lunchtime. Through the nougat truffled with tomato bread, green oil and fleur de sel, offering innovative flavors but reminiscent of the origins of the vermouth of Reus.

The essence of Reus vermouth is transmitted through Virginias nougat, and with it the Gran Torelló with one of its elegant cavas.

Recaredo + Izadittone

We finish next to the Recaredo winery and its Turó d’en Mota 2007 sparkling wine, a 100% Xarel-lo corpinnat Brut with a long aging. Its harmonious, subtle, fresh and very expressive flavor, along with white fruit aromas, dry, toasted, balsamic and mineral. Even with touches of pastries, toast and some butter. A complex fusion that makes it belong in one of the best cavas. And as the last sweet dessert, Izadittone, linked to Italian pastry, Loison, presents its panettone composed of chocolate and orujo de la Rioja alavesa from Bodegas Izadi.

Turó d’en Mota 2007 from the Recaredo winery is one of the most awaited cavas this Christmas, and with it, the delicious Izadittone panettone.

After this collection and selection of nougats, panettones and cavas, we can see that the traditionality in Christmas products is never lost. The traditional nougats are still on the table, although the great pastry chefs are innovating, but without losing the essence of its origin. A wide range to suit the tastes of different diners, from the classic panettones to fruity sparkling or sweet or savory nougat.
